Description
HARVESTING: The grapes were hand picked on the 3rd of March 2025 at 23.2°B.
WINEMAKING & MATURATION
After hand-picking the Assyrtiko, the grapes were placed in a small basket press and underwent gentle pressing followed by cold settling of the juice for 2 days. The juice was fermented in stainless steel tanks to ensure the expression of pure varietal character and kept on the lees for 4 months before being racked.
APPELLATION: Estate Wine of Origin Stellenbosch.
SOIL: Decomposed granite and loam.
ASPECT: North-facing vineyard, 200m above sea level.
AGE OF VINES: 6 years old.
